Mexican Summer Fiesta!
Celebrate the Flavors

Savor the flavors of sunny Mexico in this festive class. We will be whipping up an all-vegan menu beginning with two kinds of tamales, one filled with seitan diablo and topped with mole sauce, the other a sweet version with cinnamon–apple–raisin filling. These will be accompanied by pico de gallo salsa, tofu sour cream, and fresh guacamole. An Aztec summer salad and Mexican vanilla ice cream with chile chocolate sauce round out this delightful experience. Then, it’s time to eat! Olé!

Christine Waltermyer is the founder and director of the Natural Kitchen Cooking School. A certified holistic health counselor through the Institute for Integrative Nutrition, Christine is a natural-foods chef and a supportive food coach specializing in macrobiotic and vegan cuisine.
